Recipe: Easy Horseradish Vinaigrette
What’s your favorite salad dressing? If I’m at the grocery store, my go-to is usually a light balsamic vinaigrette. If I’m splurging at a restaurant, I’d be hard-pressed to turn down a tangy honey mustard. If I’m whipping up a salad at home, you can guarantee I’m making this easy six-ingredient (not including salt & pepper) horseradish vinaigrette to go with it.
Six ingredients, seriously—prepared horseradish, olive oil, white wine vinegar, honey, garlic and shallot—is all you need to create a healthy, tangy dressing in minutes. I’ve used this on all kinds of salads (like this Loaded Spinach Salad), so just figure out whatever flavor combo works best for you. In the photo at the bottom of this page, we drizzled the dressing over mixed greens with shredded carrots, white cheddar, red onions, avocado, chickpeas and boiled eggs.
And although I haven’t tried this yet, I could totally see tossing this with some grilled carrots or roasted broccoli! Enjoy.
INGREDIENTS
1 T. prepared horseradish
2 T. white wine vinegar
4 T. olive oil
2 t. honey
2 garlic cloves
1 shallot
Salt & pepper to taste
STEPS
1) Roughly chop the garlic and shallots.
2) Add all ingredients to a small food processor and pulse until the dressing is thin and smooth.
3) Taste and doctor up to your preference (for example, if the horseradish is too strong, you might add a bit extra honey or olive oil).
4) Drizzle on your favorite salad or veggies!
