Recipe: Lemon Feta Broccoli Rice
I love carbs just as much as the next person. Full-flour pasta, Mexican rice, pizza as far as the eye can see—this is heaven, people. But, unfortunately, I live in the real world, and I’ve gotta work in veggies more often than carbs.
That’s why I’m obsessed with this Lemon Feta Broccoli Rice; it’s made with only seven ingredients, including salt and pepper, and can be put together in a dozen minutes or less. Enjoy it as a side dish, or serve it with some boiled eggs or pita + hummus for the full shebang. You might even top it with a bit of tzatziki for an extra kick. Enjoy!
INGREDIENTS
15 oz. bag of riced broccoli
Juice from a small lemon + lemon zest
Fat free crumbled feta cheese
Olive oil
Salt + Pepper
1 tsp. mint
STEPS
1) Heat a pan with olive oil over medium heat. Pour in the bag of riced broccoli and stir.
2) Season the pan with salt, pepper and mint. Squeeze in the lemon juice.
3) Sauté the broccoli until it begins to slightly brown and crispy. Serve with additional olive oil and lemon juice if desired.
4) Finally, pour in about 3 oz. of lemon juice and stir until combined.
