List: 7 Recipes for National Sandwich Day
Sandwiches are my bread and butter (pun intended). I could eat a bowl of soup + a sandwich for lunch every single day for the rest of my life and be 100% fine.
What makes sandwiches so fabulous, you ask? They’re diverse. They’re portable. They’re generally cheap, easy to assemble and can be eaten with your hands. They’re the perfect food, and I dare someone to try to prove me otherwise.
“Too few people understand a really good sandwich.” — James Beard
If you’re digging what I’m throwing down, then go ahead and check out seven of my favorite sandwich recipes for #NationalSandwichDay!
Grilled Halloumi Sandwich with Curry Slaw
Savory grilled halloumi. Tangy, crunchy curry slaw. Sweet caramelized onions. Buttery sourdough bread. This sandwich is seriously one for the record books!
Veggie Philly Cheesesteaks
All the meaty flavor without the actual meat! Thinly sliced portobellos, yellow onions and red bell peppers are grilled and topped with a generous portion of melty smoked gouda + pepper jack cheeses. Heaven between two slices of bread.
French Onion Grilled Cheese
This sandwich is so thin, so crispy, so buttery and pairs perfectly with homemade Roasted Red Pepper & Cauliflower soup. It’s the ultimate grilled cheese if I do say so myself.
Vegetarian Reuben Sandwich
This is one of those “don’t knock it til you try it” sort of sandwiches! Grilled purple cabbage, mushrooms, onions and garlic combine with Swiss cheese and an easy. tasty sauce to make one killer sandwich.
Brussels Sprouts Fritter Sliders with Pan-Fried Bread Cheese & Herb Cream
Crunchy, pan-fried Brussels sprouts fritters are topped with tangy herb cream and squeaky bread cheese, or leipäjuusto as it’s known in Finland. This little sandwich is guaranteed to surprise!
Buffalo Chickpea & Cauliflower Pitas with Ranch Slaw
To anyone who says a pita isn’t a sandwich, I say I seriously beg to differ! This is one of my all-time favorite recipes, to be honest. For fans of buffalo wings, it’s exactly like that but (1) vegetarian and (2) BETTER!
Vegetarian Meatball Sandwich
A delicious veggie version of a super classic sandwich! The homemade veggie meatballs are made with a mixture of brown lentils, garlic, eggs, Greek yogurt, Parmesan cheese, parsley, thyme and breadcrumbs. They’re pan-fried and topped with melted provolone cheese + rich tomato sauce. It’s insanely good!
