Baked Broccoli Bites with Honey Mustard Dipping Sauce
I’m always looking for healthy, easy snacking options, and these Baked Broccoli Bites totally fit the bill! While they’re not super pretty, they are incredibly tasty. The bites use eggs and almond flour as a binding agent — did you know almond flour has twice the protein of all-purpose flour and 1/4 the carbs? These little bites pack a protein punch and are surprisingly filling for being made mostly of broccoli.
I’m a huge fan of dipping sauces, and I thought the tanginess of a homemade honey mustard would pair nicely with the earthiness of the broccoli. Let me tell you…this honey mustard sauce will have you licking your fingers. It’s super tangy and creamy, slightly sweet and is seriously, seriously delicious. I’m definitely whipping up this sauce the next time we make sweet potato fries!
INGREDIENTS - BROCCOLI BITES
3 cups riced broccoli (about two small broccoli heads)
4 eggs
1/2 c. almond flour
1 c. sharp cheddar cheese
1 t. garlic powder
1 t. onion powder
1 t. mustard powder
1 t. paprika
1/2 t. cayenne
Salt & pepper, to taste
INGREDIENTS - DIPPING SAUCE
1/4 c. light mayonnaise
1/4 c. Grey Poupon mustard
1/4 c. honey
1 T. spicy brown mustard
1 T. white wine vinegar
1/2 t. smoked paprika
Salt & pepper, to taste
STEPS
1) Preheat the oven to 400 degrees. If you bought pre-riced broccoli, then you’re a step ahead. Otherwise, chop the broccoli heads into smaller pieces and add them to a food processor. Pulse until the broccoli is in tiny pieces (or what looks like rice).
2) Whisk the eggs in a large bowl. Add the broccoli, almond flour, shredded cheese, and seasonings. Add a pinch of salt and season well with lots of freshly cracked black pepper. Use a spatula (or your hands) to combine the mixture until it starts to stick together. If it refuses to stick, add another egg or two.
3) Line a baking sheet with parchment paper. Form the broccoli mixture into bite-sized balls and place them on the baking sheet. Cook for 35-40 minutes or until the outsides are fully browned.
4) While the broccoli bites are cooking, prepare the honey mustard dipping sauce. Add the mayonnaise, both mustards, honey, white wine vinegar and smoked paprika to a bowl. Season with a pinch of salt and a fair amount of freshly cracked black pepper, and whisk well to combine.
5) Once the broccoli bites are done, allow them to cool for a couple of minutes before dunking and devouring!
