Summertime and sandwiches go hand-in-hand, don’t you think? There’s nothing like digging into a juicy Veggie Burger or smokey Mushroom Philly Cheesesteak on the patio. Here are six of my favorite summertime sandwiches, just in time for warmer weather!

ULTIMATE VEGETARIAN UMAMI BURGER

This Ultimate Vegetarian Umami Burger is without a doubt one of my best recipes to date. Here’s the deal with many vegetarian burgers: they’re bland, they lack texture, they fall apart and they’re incapable of achieving a really great sear. But with these Ultimate Vegetarian Umami Burgers, I’ve remedied ALL of those pain points while packing a ton of flavor + plant-based protein. Just add your favorite toppings!

OYSTER + PORTOBELLO MUSHROOM PHILLY CHEESESTEAKS

Marinated oyster + portobello mushrooms make for a sophisticated version of a Vegetarian Philly Cheesesteak. The mushrooms — along with sliced onions and green bell peppers — are soaked in a tangy marinade of vegetarian Worcestershire sauce, Dijon mustard, horseradish, olive oil and a few spices. This is one sandwich you won't want to miss! Serve with sweet potato fries and your favorite dipping sauce.

SPANAKOPITA LENTIL BURGERS

If you’re a fan of the classic Greek savory pastry spanakopita, you will absolutely love these Spanakopita Lentil Burgers. Rich brown lentils are combined with grilled onions, garlic, spinach, feta and ricotta cheese to create a delectable concoction. It’s topped with a classic tzatziki sauce, and the result is super fresh and tangy!

CHICKPEA SALAD SANDWICHES

Skip the boring Egg Salad and go for a delicious, plant-based, protein-packed Chickpea Salad Sandwich instead! Dijon mustard and apple cider vinegar add tanginess, and mayo (or vegan mayo) adds some needed creaminess. Herbs and spices like turmeric, garlic and fresh dill round off the dish!

This might be one of the most interesting recipes we’ve ever put together — Brussels Sprouts Fritter Sliders with Pan-Fried Bread Cheese & Herb Cream! Despite the long name, this is actually a rather quick and simple meal to put together. It’s loaded with texture and flavor and is surprisingly über filling.
